The ancient city of Kilis in Western Armenia is located 55 km from Aintap and 10 km from the border with Syria. Kilis was one of the important cities of the Hittite state and hosted many other civilizations. This is a city that has been constantly inhabited by mankind since the days of settled life and culture. It was the cradle of such civilizations as Babylon, the Hittite state, Hurri-Mitann, Aramaic, Assyrian, Roman, Byzantine, Mamluk and Ottoman Empires. Kilis consists of stone houses that open to narrow streets and numerous ancient religious buildings, such as mosques, churches and synagogues. The dishes are based on meat and bulgur, but vegetable dishes are also prepared according to the season. There are also castles left over from ancient times.
