One of the most beloved dishes of Armenian cuisine is grilled Ishkhan (trout). It is prepared in a simple yet extremely delicious way, preserving the natural taste of the fish.
To prepare it, the trout is first cleaned, washed, and seasoned with salt, black and red pepper, and lemon juice. Tarragon and small pieces of butter are placed inside the fish, giving the dish additional juiciness and aroma.
The fish is then placed on a grill and roasted over medium heat, turning it periodically until it acquires a golden-brown color.
Ingredients (for about 2.5 kg of fish)
• Ishkhan (trout)
• Salt – 1 tablespoon
• Red pepper – 1 tablespoon
• Black pepper – 1 teaspoon

• Tarragon – 1 bunch
• Butter – 50 g
